Banana Cake:
2 1/2 c. All-purpose flour
1 1/2 c. Granulated sugar
1 1/2 tsp. Baking powder
1 tsp. Baking soda
1 tsp. Salt
1/2 c. Butter, melted
1 c. Mashed ripe bananas
2/3 c. Buttermilk
2 Eggs
1 tsp. Vanilla
Grease lightly two 9x1 1/2 inch round baking pans. In
a mixer bowl combine the first 5 ingredients. Add melted
butter and bananas; beat on low speed of an electric mixer
till combined. Add buttermilk, eggs, and vanilla; beat
2 minutes on medium speed. Turn batter into prepared pans.
Bake in a 350 degree oven for 30 minutes or till done.
Cool 10 minutes on a wire rack. Remove from pans, cool
thoroghly. Frost with icing.
The Icing:
6 Tbs. Butter
4, 1/2-4 3/4 c. Powdered sugar, sifted
1/4 c. Milk
1 1/2 tsp. Vanilla
In a small mixer bowl beat butter till light and fluffy.
Gradually add about half of the powdered sugar, beating
well. Beat in the milk and the vanilla. gradually beat
in remailning powered sugar, then additional milk, if
necessary, to make frosting of spreading consistency.
The Sauce:
3/4 c. Dark Chocolate
1 c. Whipping Cream
Chop chocolate and set aside in a dry mixing bowl. On
the stove bring the cream just to a boil. Pour cream over
chocolate and stir until chocolate is completely melted.
Drizzle over cake pieces at serving time.
