Tools Needed:
9x13 baking pan
Butter cutter
Ingredients:
Crust:
1 1/2 c. All-purpose Flour
1/2 c. Powdered Sugar
6 oz. Butter
The zest of one Lemon and two Limes. Should make approximately
2 Tbls.
Filling:
3 c. Granulated Sugar
6 Eggs
1/2 c. All-purpose Flour
3/4 c. Fresh Lime Juice
6 Tbls. Fresh Lemon Juice
Instructions:
Preheat oven to 325 degrees. Grease 9x13 baking pan and
set aside.
For the crust:
Combine the flour, citrus zest, and the powdered sugar
in the bowl of an electric mixer. Using the paddle attachment,
add the butter and mix on low speed until mixture is the
size of small peas. Press the crust into the bottom of
a 9x13 pan. Bake for 20-25 minutes until golden brown.
(Personally, I do the crust in a mixing bowl and cut
the butter into the flour-sugar mixture.) Decrease oven
temperature to 300 degrees.
For the filling:
Whisk together the eggs and the sugar in a large bowl
until smooth. Stir in the flour and then the citrus juice.
Pour the citrus filling on top of the crust. Bake the
citrus bars for about 40 minutes until the citrus filling
is set. Allow them to cool for 1/2 hour, slice into squares,
and dust with the 1/4 cup powdered sugar.
