Guacamole is a standard Mexican side dish. It is very
rich. You must use ripe avocado's and haas is the highest
fat avocado available. Other varieties will work but Hass
are the best. We serve this as a condiment with our Mexican
Fiesta lunch.
Yield: Will depend on the size of the avocados.
Ingredients:
4 ripe hass avocados, skinned and de-pitted
½ c. cilantro, chopped
½ c. red onions diced
¼ c. garlic minced (optional)
Juice of 2 lemons and 1 lime
Pinch of cayenne
Salt and pepper to taste
Instructions:
I like guacamole to have a chunky texture. Place the avocados
in a mixing bowl and run a sharp knife through them until
the avocado is in small chunks. Stir in the rest of the
ingredients and alter to taste.
Serving suggestion: Serve with your favorite Mexican
dish or as an appetizer with chips.
