Chicken Parmesan


We have served this classic on several retreats. The combination of herbed bread crumbs a delicious marinara and a combination of cheeses keeps this chicken moist and delectable.

Yield: 6 servings

Ingredients:
6 - 5-6oz. chicken breasts, boneless and skinless
3 eggs
2 T. water
Pinch kosher salt
½ c. all-purpose flour
2 c. regular bread crumbs
3 T. mixed italian herbs
4 cloves garlic, minced
½ c. olive or canola oil (for sautee) + 2 T. olive oil for bread crumbs

2 c. marinara sauce (see It's Not Just Camp Food Anymore or any of your favorite marinara sauces. Trader Joe's carries wonderful sauces both of their own brands and others like Emiril Legasse's.)

12 oz. cheese: 4 oz. mozzarella, shredded
4 oz. parmesan, shredded (Grana, Pedana, or Regiano if you've got the money)
4 oz. good quality romano, shredded
(You can just make it 6 oz. mozzarella and parmesan if you like)
NOTE: Do not substitute a grated cheese product for fresh shredded cheese in this recipe.

Instructions:
Season each chicken breast with salt and pepper. Beat eggs, water, and salt in a small bowl. Dredge breasts in flour and dust off excess. Mix bread crumbs, italian herbs, garlic, and 2 T. olive oil in medium mixing bowls. Dredge breasts in egg mixture then roll in bread crumbs. This is a classic breading procedure. In a large skillet or braising pan, heat remaining oil over medium to high heat. Place each chicken in pan and cook until brown on one side, then flip over. Brown opposite side and place in roasting pan. Cook in a preheated 350 degree oven for approximately 5-10 minutes or until internal temperature reaches 170 degrees. Though this may seem like a short amount of time in the oven, chicken will not need a long time to cook as you have already cooked both sides. You must be careful when preparing chicken because it is a very easy product to over-cook and when overcooked, it becomes very dry and unpaletable. Top each chicken breast with ¼ c. marinara sauce and sprinkle cheese mixture over each piece, let cheese melt and then serve.

Serving Suggestions: Serves well over pasta or with fluffy rice. This will hold well if you need more time to get rest of dinner ready.
