Bleu Cheese Dressing


Blue cheese dressing is a love it or leave it type of food. I happen to love it. We have included it here because it can serve as a salad dressing, a dip for vegetables, or to serve with spicy chicken wings. We have served it during some of our retreats.

Yield: 1 quart

Ingredients:
1 c. real mayonnaise(Best Foods), full fat (no miracle whip)
1 c. sour cream
12 oz. crumbled bleu cheese (see note)
½ c. buttermilk
2 oz. water
juice of one lemon
3 cloves peeled garlic, minced
salt and pepper
2 T cilantro or parsley, chopped (optional)

Instructions:
Place all ingredients in a mixing bowl. Mix thoroughly. Chill and serve.

Note: To make this recipie lower in fat content, use non-fat mayonnaise, non-fat sour cream, and low-fat buttermilk.

Note on blue cheese: Depending upon your preference and your budget, all bleu cheese variations will work in this dressing. Choosing Roquefort (French bleu cheese), Stilton (English bleu cheese), Gorgonzola (Italian bleu cheese), etc. will allow you to name the dressing by the cheese. For instance, using Roquefort, you could call the dressing Roquefort Dressing. (Very good). Stilton is my favorite. These cheeses listed are very expensive, but it is soooooooooo good.
