Smoked Tomato Bruschetta
(Makes 32 canapés)
Ingredients:
6 Large smoked heirloom tomatoes, peeled, seeded and small
diced(Known as Tomato Concasse)
3 cloves garlic
1 oz. basil leaves, minced
2-3 oz. (to taste) aged Balsamic vinegar
2-4 oz. Extra Virgin Olive Oil
Salt and pepper, to taste
4 oz. fresh shredded parmigiano reggiano
1 French baguette
SPECIAL TOOLS NEEDED:
Pan
2 cups Mesquite wood chips
Screen
Aluminum Bowl
To prepare smoker: Simply place wood chips into
a dry pan, turn on the heat to create smoke, cover with
a screen and place tomato wedges on the screen and cover
with a bowl , allow tomatoes to smoke for 2 minutes.
Instructions:
Slice French baguette in 1/8" thick slices, brush
with olive oil and toast in oven at 350F until golden.
Peel tomatoes then cut into quarters, Put tomato quarters
in smoker. Remove, cool and cut into small dice . Combine
with all other emaining ingredients in a bowl and toss.
Spoon mixture neatly onto each slice of toasted, French
baguette, garnish with fresh shredded parmiagano cheese
and chiffonade of basil, Serve immediately
